Happy Birthday

For my mother's birthday I made her Chocolate Cupcakes with Chocolate Buttercream Frosting. Yum! Now the chocolate cupcake base was yet again a head-start recipe. The delicious chocolate sour cream cupcake batter with the all-secret ingredient.But the frosting was completely different. DUH! A sensation of happiness flooded over me, as I dipped my finger into the meringue-like (yet chocolaty) frosting. The reason why the cupcake and frosting were delicious was because the cupcake in total had four sticks of unsalted butter. One in the cupcake batter and three in the frosting.

I'm not saying that this cupcake thing was going to be particularity healthy for me. Sugar, eggs, and butter oh my! But hopefully my heart will keep ticking by the end of this mission.

And just when you thought I was gone...

Muahahahaha! I'm back! And with two more cupcake recipes to cut off my list! The Sweetheart cupcakes were AMAZING!!!!! And the frosting was probably to die for! Creamy, fudge frosting, slathered on a rich, divine cupcake and topped with a delectable chocolate heart. I ended up making the frosting before hand, because you have to let it cool in the fridge for about an hour. And the chocolate hearts too. My friend, Mary came over and we had a blast making cupcakes. You would not believe how many grocery runs I have to make, just to get unsalted butter and bakers chocolate! UGH!

In order to make the chocolate hearts, you have to melt chocolate and then smooth it out onto the back of a pan, that you cover with parchment paper. Who'd ever known that parchment paper has an arch nemesis? TAPE! I tried duct tape, painters tape, double sided, and any other kind of tape out there! We ended up holding down the sides. The cupcake part was one of the head start recipes in the book. The chocolate sour cream recipe! YUM! Well this is now signing out for the day!
